Shrimp and Cilantro Toasts

Ingredients

  • 1 lb large shrimp, peeled and deveined
  • 8 scallions, chopped
  • 1 stem lemon grass, chopped, white part only
  • 1 clove garlic, crushed
  • 1 egg white
  • 1 tbs oil
  • 1 tbs fresh cilantro, chopped
  • 1 tbs fish sauce
  • 2 tsp chili sauce
  • 1 tsp lemon juice
  • 8 slices stale white bread, crusts removed
  • oil for shallow frying
  • Add the shrimp, scallions, lemon grass, garlic, egg white, oil, cilantro, fish sauce, chili sauce and lemon juice to a food processor and process until smooth.
  • Spread the mixture over the bread, right to the edge, then cut each slice into 4 triangles.
  • Heat 3/4 inch of oil in a large saute pan, then add the bread and cook, shrimp side down, for 2-3 minutes.
  • Turn over and cook the other side for 1 minute, or until crisp.
  • Drain on paper towels.
