Crispy Roasted Sweet Potato Wedges with Lime and Cilantro
Ingredients
4 sweet potatoes, peeled and cut into thin wedges | ||
2 tbs olive oil | ||
1/2 tsp lime zest | ||
2 tbs lime juice | ||
3 tbs cilantro leaves, chopped | ||
kosher salt and black pepper to taste |
These are delicious sweet potatoes that are crispy and flavored with lime, olive oil, salt, pepper, cilantro and lime.
- Toss the sweet potato wedges with the olive oil and 1/2 tsp of lime zest.
- Season with salt and pepper.
- Roast on 2 rimmed baking sheets in a preheated 425 degree oven, tossing once, until golden brown. About 15 minutes.
- Drizzle with the lime juice and cilantro.
