Italian Bell Pepper and Fennel Salad
Ingredients
4 celery stalks sliced thinly on the diagonal | ||
1 red bell pepper, cut into thin strips | ||
1 yellow bell or orange bell pepper, cut into thin strips | ||
1/2 fennel bulb, cut into thin strips | ||
4 tbs fresh parsley, chopped | ||
10 whole black olives, seeded | ||
10 whole green olives, seeded | ||
For the Dressing: | ||
6-8 tbs extra virgin olive oil | ||
2-3 tbs red wine vinegar | ||
1 tsp crushed fennel seeds | ||
2 tsp dried oregano | ||
1-2 cloves garlic, crushed | ||
pinch of superfine sugar | ||
kosher salt and black pepper to taste |
This is a crispy Italian salad with celery, bell peppers, fennel and olives dressed with a spicy Italian vinaigrette.
- Place salad ingredients in a large bowl, then place the ingredients for the dressing in a screw top jar and shake well to combine.
- Taste the dressing and adjust the seasoning if desired,
- Pour the dressing over the salad, and toss well to combine.
- Cover the salad and chill for 30 minutes before serving.
