Brownies with Coconut and Chocolate Sauce
Ingredients
2 cups sugar | ||
1 stick unsalted butter, melted | ||
1/2 cup canola oil | ||
9 tbs cocoa powder | ||
4 eggs | ||
1 and 1/2 tsp baking powder | ||
1 cup ap flour | ||
1 tsp pure vanilla extract | ||
1 cup coconut | ||
1 cup pecans, roughly chopped (optional) | ||
For the Chocolate Sauce: | ||
1 cup sugar | ||
2 and 1/2 tbs cornstarch | ||
3 tbs cocoa powder | ||
1 cup water | ||
1 tsp butter | ||
1/8 tsp salt | ||
1 tsp pure vanilla extract | ||
Vanilla ice cream for serving |
These delicious brownies are covered with a silky sweet chocolate sauce. They go great with vanilla ice cream.
- Preheat oven to 350 degrees.
- In a large mixing bowl, combine the sugar, melted butter and oil.
- Stir in the cocoa powder.
- Add the eggs, one at a time, mixing well after each addition.
- Add the flour and baking powder and mix.
- Fold in the vanilla, coconut and pecans, if using.
- Spoon the mixture into a 9×13 greased baking pan and bake at 350 for 30 minutes.
- For the chocolate sauce, in a small sauce pan , combine the sugar, cornstarch and cocoa.
- Add the water and stir to combine.
- Using medium heat, stirring regularly until thick. About 8 minutes.
- Add the butter, salt and vanilla and mix.
- Top the brownies with a scoop of vanilla ice cream topped with chocolate sauce and chopped nuts.
