Cajun Black Beans

Ingredients

  • 1 lb dried black beans
  • 8 cups chicken stock
  • 2 medium onions, diced
  • 8 garlic cloves, minced
  • 1 tsp Cajun seasoning
  • 1 tsp dried thyme
  • 2 fresh tomatoes, chopped
  • 2 tsp ground cumin
  • 2 tsp chili powder
  • 1 tsp cayenne pepper
  • 1 tsp oregano
  • 1 bay leaf
  • 6 scallions, diced
  • kosher salt and black pepper to taste
  • 6 cups cooked rice
These are delicious creamy black beans with spicy Cajun spices.

  • Pick over the beans, wash then cover with water and let soak overnight.
  • Drain the beans, the add to a large stock pot along with the chicken stock and let simmer for 1 and 1/2 to 2 hours.
  • In a saute  pan saute the garlic and onions until soft, but not brown.
  • Add the onion mixture the beans, then add the spices and tomatoes.
  • Season with salt and pepper.
  • Serve over white rice garnished with scallions.
