Cajun Black Beans
Ingredients
1 lb dried black beans | ||
8 cups chicken stock | ||
2 medium onions, diced | ||
8 garlic cloves, minced | ||
1 tsp Cajun seasoning | ||
1 tsp dried thyme | ||
2 fresh tomatoes, chopped | ||
2 tsp ground cumin | ||
2 tsp chili powder | ||
1 tsp cayenne pepper | ||
1 tsp oregano | ||
1 bay leaf | ||
6 scallions, diced | ||
kosher salt and black pepper to taste | ||
6 cups cooked rice |
These are delicious creamy black beans with spicy Cajun spices.
- Pick over the beans, wash then cover with water and let soak overnight.
- Drain the beans, the add to a large stock pot along with the chicken stock and let simmer for 1 and 1/2 to 2 hours.
- In a saute pan saute the garlic and onions until soft, but not brown.
- Add the onion mixture the beans, then add the spices and tomatoes.
- Season with salt and pepper.
- Serve over white rice garnished with scallions.
