Chef Ben Fords Texas Barbecue Rub and Mop Sauce

Ingredients

  • For Texas Barbecue Rub:
  • 1/4 cup kosher salt
  • 3 tbs sugar
  • 3 tbs brown sugar
  • 1/4 cup chili powder
  • 1/4 cup New Mexico chili powder
  • 2 tbs freshly ground black pepper
  • 2 tbs ground chipolte powder
  • 2 tbs cumin
  • 1 tbs smoked paprika
  • 1 tbs onion powder
  • 1 tbs garlic powder
  • 1 tbs celery salt
  • 1 tbs Coleman's dry mustard
  • 1 tsp cayenne pepper
  • For Ben's Mop Sauce:
  • 12 oz's beer (not dark)
  • 1/2 cup cider vinegar
  • 1/4 cup vegetable oil
  • 2 tbs Worcestershire sauce
  • 2 tbs Serrano peppers, chopped
  • 1 tbs black peppercorns
  • 2 garlic cloves, crushed
  • 4 thyme sprigs
  • 1 bay leaf
  • 1/4 cup of the barbecue rub

Texas Barbecue Rub:

  • Combine all ingredients and use generously as a rub on beef, chicken or pork.
Ben’s Mop Sauce:
  • Add all ingredients to a small sauce pan and simmer for 5-10 minutes.
  • Use as a basting sauce for beef, chicken or pork.
