Charcoal Grilled White Fish Fillets with Cooked Salsa
Ingredients
4 large white fish fillets | ||
2 tbs olive oil | ||
kosher salt and black pepper to taste | ||
For the Salsa: | ||
1-2 jalapeno peppers, seeded and diced | ||
2 cloves garlic, minced | ||
2 shallots, diced | ||
2 ripe tomatoes, peeled, seeded and chopped | ||
1/4 cup fresh mint | ||
1/4 cup lemon juice | ||
3 tbs dry white wine | ||
2 tsp olive oil | ||
kosher salt and black pepper to taste |
You can use and firm white fish fillet for this recipe. This is a unusual salsa that is cooked and contains, chilies, garlic, shallots, tomatoes, fresh mint, white wine and lemon juice.
- Brush the fillets with olive and season with salt and pepper on both sides.
- Cook over hot charcoal turning once. Fish is done when it flakes easily.
- To make the salsa, saute the chili pepper for 1 minute in olive oil, then add the garlic and shallots and cook for another 1 minute.
- Add the chopped tomatoes and simmer for a few minutes until most of the liquid has evaporated.
- Add the mint and stir.
- To serve pour the salsa over the fish fillets.
