Jicama Bell Pepper Slaw
Ingredients
5-6 carrots, peeled and cut into matchstick pieces | ||
1 red bell pepper, cut into matchstick pieces | ||
1 yellow bell pepper, cut into matchstick pieces | ||
1 orange bell pepper, cut into matchstick pieces | ||
1 green bell pepper, cut into matchstick pieces | ||
1 and 1/2 cups jicama, peeled and cut into matchstick pieces | ||
1 medium red onion, peeled and thinly sliced | ||
1 small bunch cilantro leaves, chopped | ||
For the dressing: | ||
6-7 tbs orange juice | ||
3 tbs lime juice | ||
2 tbs canola oil | ||
1 tbs white sesame seeds | ||
kosher salt and black pepper to taste |
This is a crispy, colorful, refreshing salad that goes great with grilled meats, poultry or seafood.
- Combine all of the vegetables in a large bowl and gently combine well.
- In another bowl combine the dressing ingredients and mix well.
- Add the dressing to the vegetables and toss to coat.
- Taste for seasoning and adjust if necessary.
