Jicama Bell Pepper Slaw

Ingredients

  • 5-6 carrots, peeled and cut into matchstick pieces
  • 1 red bell pepper, cut into matchstick pieces
  • 1 yellow bell pepper, cut into matchstick pieces
  • 1 orange bell pepper, cut into matchstick pieces
  • 1 green bell pepper, cut into matchstick pieces
  • 1 and 1/2 cups jicama, peeled and cut into matchstick pieces
  • 1 medium red onion, peeled and thinly sliced
  • 1 small bunch cilantro leaves, chopped
  • For the dressing:
  • 6-7 tbs orange juice
  • 3 tbs lime juice
  • 2 tbs canola oil
  • 1 tbs white sesame seeds
  • kosher salt and black pepper to taste
This is a crispy, colorful, refreshing salad that goes great with grilled meats, poultry or seafood.

Directions:
  • Combine all of the vegetables in a large bowl and gently combine well.
  • In another bowl combine the dressing ingredients and mix well.
  • Add the dressing to the vegetables and toss to coat.
  • Taste for seasoning and adjust if necessary
  • Serves 8.
