Greek Meatballs

Ingredients

  • 1 and 1/2 lbs of ground lamb
  • 1 cup cooked rice
  • 2 tbs chopped onion
  • 2 tbs fresh parsley, chopped
  • 1 tbs pine nuts toasted
  • 2 cloves garlic, minced
  • 2 tsp oregano
  • 1 egg
  • flour
  • 2 cups tomato sauce
  • 4 cups water
  • 2 tbs butter
  • Mix ground lamb and rice, oregano, onion, parsley, pine nuts, garlic and eggs.
  • Mix and mold into small meatballs.
  • Roll each in flour.
  • In a large frying pan place the tomato sauce and water, then bring to a heavy simmer. Add the butter.
  • Gently drop the meatballs into this sauce, cover and simmer for 45 minutes.
