Ingredients

  • 1 cup diced unpeeled cucumber
  • 1/2 cup red bell pepper, diced
  • 1/2 cup scallions, sliced on a bias
  • 1/3 cup cilantro, chopped
  • 2 tbs soy sauce
  • 1 tbs rice vinegar
  • 2 cloves garlic, minced
  • 1/2 tsp sesame oil
  • 1 tsp red pepper flakes
  • Add all ingredients to a glass bowl and mix well.
  • Cover and refrigerate for 1 hour before serving.
  • Serve with crispy tortilla or wonton chips
