  • 1 (12 oz) can pineapple juice
  • 6 oz apple juice
  • 6 lbs first cut beef brisket
  • 3 tbs butter
  • 2 large onions, minced
  • 6 cloves garlic, minced
  • 4 (12 oz) bottles ketchup
  • 1/4 cup molasses
  • 2 tbs prepared mustard
  • 2 tbs Worcestershire sauce
  • 1 tbs soy sauce
  • 2 tbs Mexican oregano
  • 1/4 cup Tabasco sauce
  • 4 tsp kosher salt
  • 1 tbs lemon juice
  • 1 (12 oz) can beer
  • 2 tbs frozen orange juice concentrate
  • Hickory chunks, soaked for 1-2 hours
This brisket is super smokey, tangy, sweet and savory. It almost melts in your mouth.
  • Marinate the meat overnight in the pineapple and apple juice.
  • In a large sauce pan using medium heat, add the butter and and cook the onions and garlic until the onions are transparent. Do not burn.Marinate the meat overnight in the pineapple and apple juice.
  • Add the balance of the sauce ingredients and simmer for for several hours.
  • In a smoker start a charcoal fire, periodically add hickory chunks then add the brisket, fat side up which has been brought to room temperature and smoke for about 6 hours or until tender.
  • During the last hour of cooking brush the brisket¬†liberally¬†with the sauce.
  • Serve the brisket with the sauce on the side.
