Cold Creamy Artichoke Soup
Ingredients
2 (9 oz) packages frozen artichoke hearts | ||
1 and 1/2 cans cream of mushroom soup | ||
1 cup light cream | ||
1/4 cup chicken broth | ||
1/4 cup white wine | ||
Kosher salt and white pepper to taste | ||
8 thin lemon slices for garnish | ||
Fresh parsley for garnish |
- Cook artichokes according to package directions.
- Combine all ingredients except for lemon slices in a food processor and puree.
- Correct the seasoning and chill well.
- Serve in chilled soup cups and garnish with lemon slices and parsley.
