Crab Louis Salad
Ingredients
1 lb jumbo lump crab meat | ||
1/2 cup chili sauce | ||
1/4 cup mayonnaise | ||
1/4 cup scallions, thinly sliced | ||
3 tsp lemon juice | ||
5 cups mixed salad greens | ||
2 roma tomatoes, sliced | ||
4 hard cooked eggs, quartered | ||
1 (6 oz) can pitted ripe olives, optional |
- Stir together crab meat, chili sauce, mayonnaise, onion and lemon juice. Chill for at least 30 minutes.
- Place salad greens on 6 individual salad plates.
- Arrange tomatoes, eggs and olives artfully over the salad greens and top with the crab meat mixture.
