Chilled Cucumber Soup
Ingredients
2 cucumbers, peeled, seeded, chopped | ||
1/2 ripe avocado, chopped | ||
juice of 1 lime | ||
1 tbs avocado oil | ||
kosher salt to taste |
- Puree cucumbers, avocado and lime juice in a food processor or blender.
- Strain the mixture into a bowl.
- Stir in 1 cup of water or vegetable stock, and season with salt.
- Place mixture in the refrigerator and chill for several hours before serving.
- When serving, drizzle a few drops of avocado oil on each serving.
