English Cucumber Quick Pickles

Ingredients

  • 1 English Cucumber
  • 1/2 cup water
  • 3 cloves garlic, peeled and smashed
  • 2 tsp dill seed
  • 1 tbs chopped fresh dill
  • 1 tsp red pepper flakes
  • 2-3 tsp kosher salt
  • 1 cup apple cider vinegar
  • Add all ingredients to a quart jar with a tight fitting lid.
  • Shake to dissolve salt and spices.
  • Slice cucumber into thin slices, then place in the jar with the pickling liquid.
  • Refrigerate for at least 2 hours or up to 3 days before serving.
