- 10 cups water
- 2 cups kosher salt
- 1 1/2 cups brown sugar, packed
- 10 whole cloves
- 20 whole peppercorns
- small bunch fresh thyme
- 3 cinnamon sticks
- 3 star anise
- 10 cups ice water
This is a wonderful brine that in addition to salt and sugar, contains the flavors of cloves, cinnamon and star anise. You will need a large plastic container to prepare. It is especially good for chicken, beef or pork. Note you will have to make considerable space in your refrigerator for 24 hours while the meat brine’s. It is well worth the effort.
- Add all ingredients to a large stock pot and bring to a boil. Stir to dissolve the sugar and salt.
- One salt and sugar has dissolved, remove from heat, then add the ice water. Make sure the brine is totally cool before adding meat.
- Add the meat to the brine and cover with a plate, in order to insure that the meat is completely submerged.
