Mixed Greens with Feta and Dijon Vinaigrette

Ingredients

  • 3 tbs red wine vinegar
  • 2 cloves garlic, minced
  • 1 tsp Dijon mustard
  • 1 tsp sugar
  • kosher salt and black pepper to taste
  • 1/4 cup extra virgin olive oil
  • 1 (10 oz) package of mixed greens
  • 4 oz Feta cheese, crumbled
  • Place the first 5 ingredients in a blender and blend until well blended.
  • Add oil and blend for another 15 seconds.
  • Place greens in a bowl, add dressing and toss to coat.
  • Top with cheese.
