Spiced Rubbed Wild Salmon

Ingredients

  • 1 tsp ground cloves
  • 1/4 tsp ground allspice
  • 1 tsp cayenne pepper
  • 2 tbs smoked paprika
  • 1/2 tsp chili powder
  • 1 tsp black pepper
  • 1 tsp garlic powder
  • 2 tsp onion powder
  • 2 tsp kosher salt
  • 2 tbs dark brown sugar
  • 3 tbs sugar
  • 6 wild salmon fillets or steaks
  • Combine all ingredients, except the salmon in a small bowl.
  • Gently rub and press the mixture into each fillet, cover both sides and let stand for 5 minutes.
  • Lightly oil the grill and grill the fish over medium coals for 5 minutes.
  • Turn and grill for 5-8 minutes or until cooked to your preference.
