  • 4 large green peppers
  • 1 lb ground beef
  • 1/4 cup celery, chopped
  • 4 cloves garlic, chopped
  • 2 tbs onion, chopped
  • kosher salt and black pepper to taste
  • 1 medium tomato, chopped
  • 1/4 cup ketchup
  • 1 cup tomato sauce
  • 1 tsp sugar
  • 1 tsp basil leaves
  • 1/4 cup cheddar cheese grated
  • Heat oven to 350 degrees.
  • Cut tops from peppers and remove membrane and seeds.
  • In a large sauce pan, cook peppers for 5 minutes in boiling water. Drain and set aside.
  • In a large skillet, brown ground beef, celery, onions and garlic. Drain excess fat.
  • Season with salt and pepper.
  • Add rice, tomato and ketchup. Mix well.
  • Spoon mixture into peppers and place them in a shallow baking dish.
  • Combine tomato sauce, sugar and basil, mix well.
  • Spoon half of the sauce over the peppers, and bake uncovered at 350 degrees for 30-40 minutes, or until peppers are tender.
  • Spoon on remaining sauce and sprinkle with cheese during the last 5 minutes of baking.
