Summer Tomato and Cheese Salad
Ingredients
for the dressing | ||
1 tbs extra virgin olive oil | ||
2 tbs balsamic vinegar | ||
kosher salt and black pepper to taste | ||
1 tsp dried basil | ||
1 tsp dried rosemary, cracked or chopped | ||
1 tsp dried thyme | ||
1 tsp marjoram | ||
2 tsp reserved cheese brine | ||
for the salad | ||
1 qt cherry tomatoes, red and yellow mix if desired, halved | ||
4 cups mixed salad greens, coarsely chopped | ||
2 ribs celery, thinly sliced | ||
2 scallions, sliced on a bias, white and green parts | ||
1/4 cup feta cheese, crumbled | ||
1/4 cup mozzarella cheese balls in brine, halved (reserve 2 tsp brine liquid for the dressing) |
- In a large bowl, combine the olive oil, vinegar, salt pepper and herbs.
- Add the tomatoes, celery, and onions, toss to combine.
- Add 2 tsp cheese brine and allow to rest for 5 minutes.
- Add the salad greens and the cheeses and toss gently to combine.
