Ingredients

  • 1 cup Bulgar wheat, cooked
  • 1 large ripe tomato, seeded and chopped
  • 1 bunch scallions, chopped, white and green parts
  • 1 cucumber, seeded and diced
  • 1 bunch fresh mint leaves, chopped
  • 1 cup fresh parsley leaves, chopped
  • juice from 3 lemons
  • 2 tsp ground cumin
  • 1/4-1/2 cup extra virgin olive oil
  • kosher salt and black pepper to taste
  • Cook Bulgar whet according to package directions.
  • In a large bowl combine all ingredients and combine well.
  • Taste for seasoning and adjust if desired.
