Slow Cooker White Beans with Tasso

Ingredients

3 1/2 cups chicken stock
2 cups Great Northern beans, sorted and rinsed
1 smoked ham hock
1/2 cup andouille sausage, diced
1 yellow onion, chopped
2 celery stalks, chopped
1 red bell pepper, diced
4 garlic cloves, diced or pressed
2 bay leaves
1/2 habanero pepper, seeded and finely minced
1 tbs fresh parsley, chopped
  • Stir 3 1/4 cup of chicken stock and all remaining ingredients in a slow cooker.
  • Cover and cook on high until beans are tender, stirring occasionally and adding more stock if dry, about 4 1/2 hours.
  • Remove ham hock and cut off all the meat, shred and return to beans.
  • Season with salt and pepper.
