Tacos Al Pastor

Ingredients
Roasted pork shoulder (shredded all fat if any removed) | ||
2 tbs cumin | ||
2 tbs ground coriander | ||
4 tbs chili powder | ||
1/4 cup fresh lime juice | ||
4 tbs chili powder | ||
1/4 cup olive oil | ||
Chicken stock | ||
kosher salt and fresh cracked black pepper to taste | ||
chopped fresh cilantro | ||
corn tortillas |
The predominate street food in Mexico was “tacos pastore” and it is a highly contested topic of discussion regarding who has has the best ones. I sampled from many different places and came to the conclusion that they were all very, very, good!
Tacos Pastor consist of two grilled corn tortillas filled with as savory meat and garnished with cilantro, onions and lime juice. So simple, but fantastic! What we get up here, especially on the east cost, has very little to do with real Mexican food. So I am going to give you my take on these special tacos. The key is in the flavor of the meat. If you prepare the Cuban roast pork recipe, you are almost there.
- Add olive oil to skillet using medium heat.
- Add all dry spices to olive oil and saute gently.
- Add chicken stock after 5 minutes.
- Add shredded pork and reduce for another 10 minutes, cooking very slowly.
- Once pork is heated through remove from pan and drain if necessary.
- Grill corn tortillas on grill, just to make pliable.
- Add pork atop 2 tortillas add cilantro, chopped onions, and fresh squeezed lime juice and serve.
