Sea Scallops with Ginger, Garlic and Chilies

Ingredients

1 lb fresh sea scallops
4 celery stalks (tender inside stalks)
1 bunch of scallions cut on a bias
1 oz piece of fresh ginger, peeled
3 large cloves of garlic
3 tbs virgin olive oil
1/2 tbs chili powder
2 tbs of lemon juice
2 tbs of dark soy sauce
3tbs chopped cilantro
1 Thai bird pepper halved
Kosher salt and fresh cracked black pepper to taste.

Scallops are one of our favorite sea foods. If you can source fresh scallops. Their sweetness and texture is preferable to frozen.
  • Cut the scallops in 1/2 inch discs.
  • Slice the celery and onions diagonally.
  • Peel and slice the ginger and garlic thinly and halve the Thai pepper.
  • Heat the oil in a large skillet. Add the prepared ingredients including the scallops along with the chili powder.
  • Gently Stir fry over medium heat for 2 minutes, moving ingredients around the pan constantly
  • Pour in the lemon juice, and soy sauce, then stir in two tbs of chopped cillantro
  • Taste for seasoning.
  • May be served over rice.
