Thai Green Papaya Salad
Ingredients
1 green papaya, julliened | ||
1 cucumber, julliened | ||
1/2 red onion, julliened | ||
1 cup bean sprouts | ||
1/4 cup mint leaves, juillened | ||
1/4 cup cilantro leaves, chopped | ||
2 tbs peanuts, toasted and chopped | ||
Kosher salt and black pepper to taste | ||
2 red Thai chilies, chopped with seeds | ||
1/4 cup rice vinegar | ||
Juice of 1 lime | ||
3 large cloves garlic, minced or pressed | ||
1/2 tbs red chili paste | ||
1 tbs sugar | ||
1 1/2 tbs peanut oil | ||
1 tbs fish sauce |
This is one of our favorite salads. Crisp, crunchy, spicy, sour, sweet, and salty.
- Mix all ingredients for salad in a large bowl.
- In another large bowl whisk all ingredients for dressing.
- Pour dressing over salad and mix.
- Recipe may be doubled or tripled.
