Chocolate Cake Napoleon with Rich Chocolate Frosting


  • 6 large eggs, separated
  • 1 cup sugar
  • 4 oz's semi sweet chocolate,melted
  • 4 oz's semi sweet chocolate,melted
  • 1 tsp baking powder
  • 3/4 cup chopped almonds
  • 1/2 tsp ground cinnamon
  • 1/4 tsp ground cloves
  • Pinch of salt
  • 3 tbs brandy
  • 2 tbs butter
  • 4 oz's semi sweet chocolate
  • 1 tbs chopped pistachio nuts
If you are craving chocolate, this cake is for you!


  • Grease a 12 inch long loaf pan, and sprinkle lightly with flour.
  • Preheat oven to 350 degrees.
  • Separate the eggs. Put the yolks and half the sugar into a large bowl.
  • Beat until pale and creamy, with an electric mixer..About 5 minutes.
  • Beat the egg whites until stiff; fold in the remaining sugar.
  • Carefully fold into egg yolk mixture with melted chocolate.
  • Sift flour with baking powder, mix with almonds, cinnamon, cloves and salt.
  • Carefully fold flour mixture into egg mixture with brandy.
  • Melt butter and fold into mixture while warm.
  • Turn batter into prepared pan and smooth the surface.
  • Bake for about an hour. Remove from oven and place on a rack to cool.
  • Melt the chocolate over a double broiler over low heat.
  • Spread the melted chocolate over the cake, then sprinkle pistachios onto chocolate before it sets.
