Blue Cheese and Carrot Salad
- 8 carrots,peeled and thinly sliced
- 1/2 cup plain yogurt
- 1/2 cup Gorgonzola or other blue cheese
- 2 tbs extra virgin olive oil
- kosher salt and fresh cracked black pepper to taste
If you like carrots and blue cheese this salad is an unusual combination. The sharp flavor of the blue cheese brings out the sweetness of the carrots.
- In a bowl combine the yogurt,blue cheese and olive oil.
- Season with salt and pepper.
- Add the carrots and mix well to coat.
