Spiced Grilled Lime Chicken with White Sauce

Ingredients

1 tbs thyme
1 tbs oregano
1 tbs ground cumin
1 tbs paprika
1 tsp garlic powder
Kosher salt and fresh cracked black pepper
Juice from 2 limes
2 tbs canola oil
1 3-4 lb fryer chicken, cut into pieces
This recipe takes charcoal grilling to a new level. The white sauce is a wonderful bonus.

Directions:

  • Place chicken in a non reactive bowl and add all of the ingredients and rub well into chicken.
  • Add spiced chicken to a large zip lock plastic bag and refrigerate for at least 4 hours or overnight.
  • Meanwhile prepare the white sauce.
  • Once the chicken has marinated, grill over hot charcoal or on a gas or stove top grill. Cook about 15 minutes per side or until firm, turning several times during cooking.
  • You may baste chicken with some of the white sauce toward the end of cooking.
White Sauce:
  • 1 and 1/4 cups mayonnaise
  • 1/4 cup white vinegar
  • 1 tsp garlic powder
  • kosher salt and fresh cracked black pepper to taste
  • 1 tsp cayenne pepper
  • 1 tbs whole grain spicy brown mustard
  • 1 tsp 2 tsp wasabi powder (you may substitute prepared horseradish)
  • Mix together all ingredients until thoroughly combined.
  • 1 tsp sugar
  • 2 tsp wasabi powder ( you can substitute prepared horseradish if desired.
  • Mix together all ingredients until thoroughly combined.
