When grilling food over hot coals there are many techniques and methods used to maximize your finished product. There is direct grilling indirect grilling and smoking. In future posts we will be discussing all of these methods, including the use of different woods, charcoal and gas. The purpose of this post is to give you a head start on proper grilling temperatures.
When grilling foods, it’s important to have the coals at the correct temperature. To test the temperature of the coals, hold your hand, palm-side down, at the level the food will be cooked. Count the seconds ( one thousand, two one thousand, etc) until you can comfortably hold your hand in place.
