Coconut Honey Mustard Chicken Appetizers


  • 2 large boneless, skinless chicken breasts, cut into 1 inch cubes or strips
  • 4 tbs yellow mustard
  • 4 tbs honey
  • 4 tbs honey
This is great dish to serve as a pass around appetizer.Coconut honey and chicken make a wonderful combination. This appetizer may also be made with shrimp or scallops. Recipe may be doubled.


  • Pre heat oven to 400 degrees.
  • Blend Mustard and honey in a bowl.
  • Dip chicken in the mustard/honey mixture, then roll in coconut.
  • Place chicken cubes in a single layer in a large well greased baking dish.
  • bake until chicken is golden, about 8 to 10 minutes.
  • Using tongs turn chicken over and bake for 5 minutes longer until golden.
  • Serve on a bed of red leaf lettuce with toothpicks.
