Cuban Black Beans
Ingredients
1 medium onion, minced | ||
3 cloves garlic, minced | ||
2 tbs olive oil | ||
1 pound dried black beans | ||
3 cups beef broth, canned or homemade | ||
3 cups water | ||
1 cup smoked ham, chopped | ||
1 tomato, chopped | ||
1/4 cup dark rum | ||
2 tsp cumin | ||
2 tsp ground oregano | ||
1 habenero pepper, chopped |
This is a classic preparation of a Cuban favorite.
- Saute onion and garlic.
- Add remaining ingredient and bring to a boil.
- Reduce heat, cover and simmer for 2 hours.
- Serve with rice.
