Parmesan Ricotta Spinach Spread
|1lb of Ricotta cheese|
|1/2 cup grated Parmesan cheese|
|1 cup of spinach, blanched|
|kosher salt and fresh cracked black pepper to taste|
|3 tbs parsley, chopped|
|1 tbs heavy cream|
|dash of nutmeg|
|3 tbs chives Chopped|
This is delicious spread that can be used with crackers or crusty bread.
- Whisk the fresh cheese and cream until it reaches a soft and frothy consistency.
- Blanch the spinach and squeeze all water out.
- Add Parmesan, salt, pepper, nutmeg and chives.
