Parmesan Ricotta Spinach Spread

  • 1lb of Ricotta cheese
  • 1/2 cup grated Parmesan cheese
  • 1 cup of spinach, blanched
  • kosher salt and fresh cracked black pepper to taste
  • 3 tbs parsley, chopped
  • 1 tbs heavy cream
  • dash of nutmeg
  • 3 tbs chives Chopped
This is delicious spread that can be used with crackers or crusty bread.


  • Whisk the fresh cheese and cream until it reaches a soft and frothy consistency.
  • Blanch the spinach and squeeze all water out.
  • Add Parmesan, salt, pepper, nutmeg and chives.
