Conch Fritters

  • 6 medium raw Conch's, minced (avail able in Caribbean grocery's, mail order, or your fish monger)
  • 1 medium onion, chopped
  • 1 medium tomato topped
  • 1 cup cream
  • 2 tbs sweet pepper, chopped
  • 1 cup water
  • 1 tsp kosher salt
  • 3 tbs celery, chopped
  • 2 tbs butter
  • 2 eggs, well beaten
  • 2 cups flour
  • 4 tsp baking powder
  • 1/2 scotch bonnet or Habanero pepper chopped
  • oil for frying

This a staple of Caribbean cooking especially in the Bahamas. The conch is flavored with tomatoes, sweet peppers, onions and hot pepper.

  • Add all ingredients to a large bowl and make a stiff batter.
  • Heat oil in a large saute pan, enough to cover the bottom of the pan with 1/2 inch of oil.
  • Using a large spoon drop spoonfuls of batter into the oil and fry until golden brown. About 3 minutes on each side.
  • Serve with rice and peas.
