Conch Fritters
Ingredients
6 medium raw Conch's, minced (avail able in Caribbean grocery's, mail order, or your fish monger) | ||
1 medium onion, chopped | ||
1 medium tomato topped | ||
1 cup cream | ||
2 tbs sweet pepper, chopped | ||
1 cup water | ||
1 tsp kosher salt | ||
3 tbs celery, chopped | ||
2 tbs butter | ||
2 eggs, well beaten | ||
2 cups flour | ||
4 tsp baking powder | ||
1/2 scotch bonnet or Habanero pepper chopped | ||
oil for frying |
This a staple of Caribbean cooking especially in the Bahamas. The conch is flavored with tomatoes, sweet peppers, onions and hot pepper.
Directions:
- Add all ingredients to a large bowl and make a stiff batter.
- Heat oil in a large saute pan, enough to cover the bottom of the pan with 1/2 inch of oil.
- Using a large spoon drop spoonfuls of batter into the oil and fry until golden brown. About 3 minutes on each side.
- Serve with rice and peas.
