Corn Pancakes


  • 1 and 1/4 cups flour
  • 1 tsp baking powder
  • 1 tsp kosher salt
  • 2 eggs, beaten
  • 1 cup milk
  • 2 tbs corn oil
  • 2 cups of corn
These are pancakes full of corn that go perfectly with butter and maple syrup.


  • Sift together dry ingredients.
  • Combine the eggs, milk and oil.
  • Mix into dry ingredients, then stir in the corn.
  • Baled on a preheated, lightly greased griddle.
  • Serve with butter and honey or syrup.
