- 4 cups of sliced cooked beets or 2 1lb cans of beets
- 1/2 cup sour cream
- 2 tbs vinegar
- 2 scallions, sliced
- 1 tbs sugar
- 2 tsp kosher salt
- fresh cracked black pepper to taste
Sour cream and green onions turn this dish into a wonderful rose colored delicious side dish.
- Stir together the sour cream, vinegar, onion, sugar, salt and pepper.
- Pour over beets in a sauce pan.
- Heat slowly, stirring occasionally. Do not boil.
- Serve when warm.
