Country Beets

Ingredients

4 cups of sliced cooked beets or 2 1lb cans of beets
1/2 cup sour cream
2 tbs vinegar
2 scallions, sliced
1 tbs sugar
2 tsp kosher salt
fresh cracked black pepper to taste
Sour cream and green onions turn this dish into a wonderful rose colored delicious side dish.

  • Stir together the sour cream, vinegar, onion, sugar, salt and pepper.
  • Pour over beets in a sauce pan.
  • Heat slowly, stirring occasionally. Do not boil.
  • Serve when warm.
