Easy Orange Cheesecake


For the crust 1 cup graham cracker crumbs
1/3 cup firmly packed brown sugar
1/2 stick unsalted butter, melted
Fro the filling 4, 8 oz packages of cream cheese, softened
1 cup sugar
1 tsp pure vanilla extract
4 eggs
1 tbs lemon juice
1 tbs lemon juice
1 8, oz can of mandarin oranges
several mint leaves for garnish
  • Pre heat oven to 325 degrees.
  • For the crust mix the crumbs, brown sugar and butter.
  • Press onto the bottom of a 9 inch spring form pan. Place in the oven and bake for 10 minutes.
  • For the filling beat cream cheese, sugar and vanilla at medium speed until well blended.
  • Add eggs one at a time, mixing at low speed after each addition just until blended.
  • Blend in juice and peel.
  • Pour cheese cake mixture over crust.
  • Bake for 45 to 50 minutes or until the center is almost set.
  • Run knife around rim of pan to loosen cake.
  • Allow cake to cool completely before removing pan.
  • Refrigerate for 4 hours or overnight.
  • Garnish artfully with oranges.
