Easy Orange Cheesecake
Ingredients
For the crust 1 cup graham cracker crumbs | ||
1/3 cup firmly packed brown sugar | ||
1/2 stick unsalted butter, melted | ||
Fro the filling 4, 8 oz packages of cream cheese, softened | ||
1 cup sugar | ||
1 tsp pure vanilla extract | ||
4 eggs | ||
1 tbs lemon juice | ||
1 tbs lemon juice | ||
1 8, oz can of mandarin oranges | ||
several mint leaves for garnish |
- Pre heat oven to 325 degrees.
- For the crust mix the crumbs, brown sugar and butter.
- Press onto the bottom of a 9 inch spring form pan. Place in the oven and bake for 10 minutes.
- For the filling beat cream cheese, sugar and vanilla at medium speed until well blended.
- Add eggs one at a time, mixing at low speed after each addition just until blended.
- Blend in juice and peel.
- Pour cheese cake mixture over crust.
- Bake for 45 to 50 minutes or until the center is almost set.
- Run knife around rim of pan to loosen cake.
- Allow cake to cool completely before removing pan.
- Refrigerate for 4 hours or overnight.
- Garnish artfully with oranges.
