Salmon and Avocado Salad
Ingredients
1 cup of small pasta | ||
1lb of fresh salmon filet, boneless and skinless, poached or roasted | ||
1/2 cup chopped celery | ||
2 hard cooked eggs, chopped | ||
1/2 cup mayonnaise | ||
2 tsp curry powder | ||
1 tsp garlic powder | ||
1 tsp garlic powder | ||
lettuce leaves | ||
paprika | ||
kosher salt and fresh cracked black pepper |
This is a super refreshing light salad. Fresh salmon is married with avocado and seasoned with lemon juice and curry.
- Cook pasta according to package directions. Rinse, drain and cool.
- Poach or roast the salmon fillet until meat is flaky.
- Flake the salmon in a medium bowl.
- Add the cooked pasta, celery, chopped eggs, mayonnaise and curry powder. Toss lightly, and chill.
- Just before serving, halve avocados lengthwise and remove pit.
- Peel the avocado and brush all over with lemon juice to prevent discoloration.
- Fill each avocado half with the salmon mixture (you should have six halves).
- Serve filled avocado halves on a bed of lettuce and garnish with paprika.
