Salmon and Avocado Salad


  • 1 cup of small pasta
  • 1lb of fresh salmon filet, boneless and skinless, poached or roasted
  • 1/2 cup chopped celery
  • 2 hard cooked eggs, chopped
  • 1/2 cup mayonnaise
  • 2 tsp curry powder
  • 1 tsp garlic powder
  • 1 tsp garlic powder
  • lettuce leaves
  • paprika
  • kosher salt and fresh cracked black pepper

This is a super refreshing light salad. Fresh salmon is married with avocado and seasoned with lemon juice and curry.

  • Cook pasta according to package directions. Rinse, drain and cool.
  • Poach or roast the salmon fillet until meat is flaky.
  • Flake the salmon in a medium bowl.
  • Add the cooked pasta, celery, chopped eggs, mayonnaise and curry powder. Toss lightly, and chill.
  • Just before serving, halve avocados lengthwise and remove pit.
  • Peel the avocado and brush all over with lemon juice to prevent discoloration.
  • Fill each avocado half with the salmon mixture (you should have six halves).
  • Serve filled avocado halves on a bed of lettuce and garnish with paprika.
