Lemon Sorbet

  • Grated peel of 1 lemon
  • 1 cup water
  • 3/4 cup sugar
  • 1 cup fresh lemon juice
  • 1 cup fresh lemon juice
  • 1 egg white, whipped
This is a classical recipe for a palate cleansing lemon sorbet.


  • In a sauce pan, simmer the lemon peel, water and sugar for 10 minutes, then cool.
  • In a bowl, mix the sugar syrup, lemon juice and mineral water.
  • Pour into an ice cream maker and freeze according to manufacturers directions.
  • Freezer Method – Pour prepared mixture in a shallow freezer proof container.
  • Cover and place in the freezer and freeze to a slush.
  • In a food processor or blender, process the semi-frozen sorbet and egg white for 1 minute until smooth and light.
  • Return to freezer,cover and freeze until firm.
