Lemon Sorbet
Ingredients
Grated peel of 1 lemon | ||
1 cup water | ||
3/4 cup sugar | ||
1 cup fresh lemon juice | ||
1 cup fresh lemon juice | ||
1 egg white, whipped |
This is a classical recipe for a palate cleansing lemon sorbet.
- In a sauce pan, simmer the lemon peel, water and sugar for 10 minutes, then cool.
- In a bowl, mix the sugar syrup, lemon juice and mineral water.
- Pour into an ice cream maker and freeze according to manufacturers directions.
- Freezer Method – Pour prepared mixture in a shallow freezer proof container.
- Cover and place in the freezer and freeze to a slush.
- In a food processor or blender, process the semi-frozen sorbet and egg white for 1 minute until smooth and light.
- Return to freezer,cover and freeze until firm.
