Moroccan Ras El Hanout Spice


2 tsp ground ginger
2 tbs ground cardamon
2 tsp ground mace
2 tsp cinnamon
2 tsp all spice
1 tsp ground coriander seeds
1 tsp ground nutmeg
1 tsp turmeric
1 tsp fresh cracked black pepper
1 tsp white pepper
1 tsp cayenne pepper
1/2 tsp anise seeds
1/2 tsp ground cloves
Ras El Hanout is a Moroccan spice that is typically used to flavor fish, lamb, chicken or vegetables.
It is quite complex in flavor and contains many spices. In Morocco there are many versions of this spice mixture and it is used as an every day spice. Traditionally this spice mixture is made using whole spices which is best. You may use pre-ground spices if you wish.
  • If you are using a spice grinder blend all spices until mixed well.
  • If you are using spices that have been previously ground, place them in a bowl and mix well.
  • You may store in a covered container for up to 6 months.
  • Recipe may be doubled.
