Classic Seafood Breading

Ingredients

3/4 cup yellow corn meal (we like Indian Head)
1/2 cup flour
1 and 1/2 tsp salt
1/4 tsp red pepper
1/2 tsp black pepper
1/2 tsp cumin
1/4 tsp chili powder
1 tsp garlic powder
1 tsp onion powder

There is no need to purchase pre-packaged seafood breading. It is super simple to make, it costs 75% less and is 100% better. This recipe may be doubled or tripled depending on how much seafood you are frying.

Directions:

  • Add all ingredients to a bowl and mix well.
  • When breading seafood, dip into water then into corn meal mixture.
  • Remove excess then fry seafood in 350 degree oil for 3 to 4 minutes.

    Several years ago I lived in Charleston SC and while there I would often eat at various restaurants. Once I ate at the Ice House restaurant in the Market and I remember having fried shrimp for lunch. The occasion stands out because the chef, a Johnson and Wales graduate, shared with me the ingredients for the shrimp dredge he used prior to frying the shrimp. He wrote the recipe on a napkin and it has since been lost along with my memory of the proportions.
    The ingredients were garlic powder, Lawry’s seasoned salt and Old Bay seasoning. I am seeking the recipe. Will you please help? Thank you in advance for your effort.

    • Well we recommend that you experiment. We are not sure that you need the seasoned salt as the old bay is very salty. Try equal proportions of the old bay garlic powder, onion powder and black pepper. This should work very well.
