Classic Rice Salad


  • 3 cups cooked rice, cooled
  • 1/4 cup diced roasted red peppers, drained
  • kosher salt and fresh cracked black pepper to taste
  • 1 cup mayonnaise
  • 1 tsp prepared mustard
  • 1 cup finely chopped onion
  • 1/2 cup sweet pickles, chopped
  • 4 hard boiled eggs chopped
This is super simple rice salad that you can prepare in a snap.

  • In a bowl mix together the mayonnaise and mustard. Mix well.
  • Add all  other ingredients and gently mix with dressing.
  • Chill and serve.
