Classic Rice Salad
|3 cups cooked rice, cooled|
|1/4 cup diced roasted red peppers, drained|
|kosher salt and fresh cracked black pepper to taste|
|1 cup mayonnaise|
|1 tsp prepared mustard|
|1 cup finely chopped onion|
|1/2 cup sweet pickles, chopped|
|4 hard boiled eggs chopped|
This is super simple rice salad that you can prepare in a snap.
- In a bowl mix together the mayonnaise and mustard. Mix well.
- Add all other ingredients and gently mix with dressing.
- Chill and serve.
