Avocado Anchovie Salad Dressing
|2 ripe avocados, peeled and seeded|
|1 small can of Anchovie fillets with oil|
|3 tbs red wine vinegar|
|juice from 1/2 lemon|
|kosher salt and fresh cracked black pepper to taste|
This is a wonderful dressing served over crisp greens or a vegetable platter.
- Add all ingredients to a food processor and blend until smooth.
- Taste for seasoning.
