Parsley Butter


  • 1/2 cup unsalted butter
  • 2 tbs chopped parsley
  • 1 tbs snipped chives
  • dash of kosher salt
This is a compound butter that is delicious served over chicken or fish.
  • In a bowl, let butter soften slightly. Beat until smooth.
  • Mix in parsley and chives along with a dash of salt.
  • Mix well then turn out on to a piece of aluminum foil and shape into a log.
  • Place in refrigerator until firm.
  • You may cut of a disc to place top of a cooked dish.
  • This butter may also be frozen.
