Pumpkin Bread
Ingredients
1 lb of canned pumpkin | ||
3 eggs | ||
3/4 cup canola oil | ||
1/2 cup water | ||
2 and 1/2 cups of sifted flour | ||
2 and 1/4 cups sugar | ||
1 and 1/2 tsp baking soda | ||
1 and 1/4 tsp salt | ||
1 tsp nutmeg | ||
1 tsp cinnamon | ||
1/4 tsp allspice | ||
1/4 tsp ground cloves | ||
1/2 cup golden raisins | ||
1/2 cup chopped walnuts |
- Preheat oven to 350 degrees.
- Grease well and flour 2 loaf pans.
- Beat eggs, pumpkin, oil and water.
- Sift together flour, sugar, baking soda, salt and spices.
- Fold into pumpkin mixture.
- Add raisins and nuts.
- Divide batter between the 2 loaf pans and fill no more that half full.
- Bake for about 45 minutes or until toothpick inserted in the middle comes out clean.
