Szechuan Pepper Oil


  • 4 cups canola oil
  • 1 inch piece of ginger, crushed
  • 2 scallions, chopped
  • 1/4 cup Szechuan peppercorns
  • 2 tbs whole cloves
  • 2 cups dried red chilies
  • 1/4 cup red chili flakes
  • 2 black cardamon pods
  • 1/4 cup chili powder
  • 4 star anise pods
This is traditional Chinese Szechuan seasoning that is quite savory and has a pleasant kick. It may be used in  the preparation of sir fry dishes as well as a pepper sauce to sprinkle over almost anything that you want to have some spice. This recipe will keep refrigerated for up to 6 months.
  • Add all ingredients to a large sauce pan and bring heat up to a simmer.
  • Simmer for 1 hour, then turn off heat.
  • Let cool for several hours.
  • Transfer mixture to a covered plastic container and refrigerate until use.
