Szechuan Pepper Oil
Ingredients
4 cups canola oil | ||
1 inch piece of ginger, crushed | ||
2 scallions, chopped | ||
1/4 cup Szechuan peppercorns | ||
2 tbs whole cloves | ||
2 cups dried red chilies | ||
1/4 cup red chili flakes | ||
2 black cardamon pods | ||
1/4 cup chili powder | ||
4 star anise pods |
This is traditional Chinese Szechuan seasoning that is quite savory and has a pleasant kick. It may be used in the preparation of sir fry dishes as well as a pepper sauce to sprinkle over almost anything that you want to have some spice. This recipe will keep refrigerated for up to 6 months.
- Add all ingredients to a large sauce pan and bring heat up to a simmer.
- Simmer for 1 hour, then turn off heat.
- Let cool for several hours.
- Transfer mixture to a covered plastic container and refrigerate until use.
