Alaska Smoked Salmon Summer Pasta Salad

  • 1/2 lb bow tie or penne pasta, cooked according to package directions
  • 1/2 lb of Alaska smoked salmon, sliced or chunked
  • 12 oz blanched green or yellow beans, asparagus or zucchini, cooled and cut into 2 inch pieces.
  • 4 scallions, cut on a bias. (White and green parts)
  • 1/3 cup olive oil
  • 1/4 cup fresh lemon juice
  • 1/4 cup fresh chopped dill
  • kosher salt and fresh cracked black pepper to taste
  • 1/4 tsp red pepper flakes
  • In a large bowl, combine pasta, Alaska smoked salmon and vegetables.
  • In a separate bowl whisk olive oil, lemon juice, dill and seasonings.
  • Pour over salad and toss.
  • Variation: Add 2 to 3 ozs of Blue or Parmesan cheese before serving
