Alaska Smoked Salmon Summer Pasta Salad
Ingredients
1/2 lb bow tie or penne pasta, cooked according to package directions | ||
1/2 lb of Alaska smoked salmon, sliced or chunked | ||
12 oz blanched green or yellow beans, asparagus or zucchini, cooled and cut into 2 inch pieces. | ||
4 scallions, cut on a bias. (White and green parts) | ||
1/3 cup olive oil | ||
1/4 cup fresh lemon juice | ||
1/4 cup fresh chopped dill | ||
kosher salt and fresh cracked black pepper to taste | ||
1/4 tsp red pepper flakes |
- In a large bowl, combine pasta, Alaska smoked salmon and vegetables.
- In a separate bowl whisk olive oil, lemon juice, dill and seasonings.
- Pour over salad and toss.
- Variation: Add 2 to 3 ozs of Blue or Parmesan cheese before serving
