Blueberry Filled Cantaloupe


  • 3 cantaloupes, chilled
  • 4 cups fresh or frozen blueberries
  • 1/2 cup grenadine
  • 2 tbs lime juice
  • 6 tbs sifted confectioners sugar
  • fresh mint leaves
  • Cut melons into half and remove seeds.
  • Combine blueberries. grenadine,lime juice and confectioners sugar.
  • Divide mixture evenly among the cantaloupe halves.
  • Chill for at least 1 hour before serving.
  • Garnish with fresh mint leaves.
