Cold Lemon Japanese Buckwheat Noodles


  • 1/2 lb of buckwheat noodles
  • 1/4 cup lemon juice
  • 2 tbs soy sauce
  • 1 tsp sesame oil
  • 1 tsp chopped ginger
  • 1/4 cup cilantro, minced
  • Cook noodles according to package directions
  • Drain noodles and rinse with  cold water until cool. Place in a bowl.
  • in a small bowl, stir together lemon juice, soy sauce, sesame oil and ginger.
  • Pour over noodles, add cilantro and toss.
