Pineapple Rum Smash


  • 3 cups of pineapple chunks
  • 1/2 cup pineapple juice
  • 1/4 cup lime juice
  • 2 tbs fresh mint, minced
  • 1/3 cup sugar
  • 2 cups of club soda, chilled
  • 1/2 to 1 cup of white rum, more if desired
  • 6 mint sprigs for garnish
  • Place pineapple, lime juice, mint and sugar in a blender and blend on high until the mixture is frothy.
  • Pour into a tall pitcher.
  • Add club soda and rum and stir to mix.
  • Pour into 6 sugar dipped ice filled glasses and garnish with mint.
