Mango Mint Salsa
|1 cup diced fresh mango|
|1/4 cup red bell pepper, diced|
|1/4 cup red onion, diced|
|1/4 cup scallions, chopped|
|2 tbs mint, chopped|
|1 clove garlic, chopped|
|2 tbs fresh squeezed lime juice|
|1 tbs extra virgin olive oil|
|kosher salt and fresh cracked black pepper to taste.|
- Add all ingredients to a non reactive bowl and combine well.
- Allow flavors to marry for at least 1 hour before serving.
